Both
Both QuickTime and Java have distinct advantages and disadvantages, which is why many virtual tour operators choose to use both methods, to insure the best possible combination of quality and ease-of-use.

Resolution:

Full Screen
High Resolution (~600x400)
Medium Resolution (~400x280)
If a physically large panorama viewer window is desired, higher resolution is necessary. Higher resolution panoramas are generally larger files.

Vertical Field of View:
(Mark one)
180° Example
150°
  90°
Vertical Field of View (VFOV) determines how much the user can tilt the panorama up and down. 90° VFOV is relatively wide and adequate for everything but very small spaces, while 180° enables the user to look straight up and down.

Auto-Rotation:
Auto-Rotation
When it is auto-rotate enabled, a panorama begins turning as soon as it is loaded, leaving out any guesswork on the user end.

Custom Graphic Buttons
Custom Rollover Buttons
Custom Flash Buttons
Tour Navigation -- that is, the method of switching between views -- can range from the simple (Text) to the fancy (Flash).
Other Attributes: Graphic Map (.jpg/.gif)
Flash Map
No Map
A clickable map can provide a much more visual and intuitive way to navigate a tour. For example, the idea map for a real estate tour would resemble blueprints.
Custom Navigator Bar (Java Only) You can customize the look of the panorma navigation bar which overlays the panorama viewer window when using Java delivery.

Hotspots are clickable areas within the panorama viewer window which allow the user to 1) jump from scene to scene; 2) point out information about objects in the panorama; 3) change certain attributes of the tour without changing the active panorama.

Audio (QuickTime Only) Panoramas can contain ambient sound - a great way to describe the mood of a scene.
